Why gelato vs ice cream?

Gelato has more milk than cream compared to ice cream and, in turn, has less fat. Making gelato involves churning at a much slower speed than making ice cream.  

Gelato is denser and served at a warmer temperature which results in a more intense flavor.

Made the artisanal way, gelato adds fruit in season,  adapting recipes to available ingredients.  

Gelato cannot be mass produced.
